That’s why our Extra Virgin Olive Oil (EVOO) is crafted using 100% mechanical, cold-extraction methods — with no chemicals, no refining, and no compromises. 1. Harvesting at the Right Moment
We begin with carefully hand-picked or gently shaken olives, harvested at just the right level of ripeness. This early-harvest approach preserves the olives’ natural antioxidants, flavor, and nutritional goodness — the foundation of truly premium EVOO.
2. Thorough Cleaning & Sorting
Once the olives arrive at our mill, they are cleaned, sorted, and washed to remove leaves, twigs, dust, and debris. Only the freshest and healthiest olives are accepted — because any impurity could affect the purity and aroma of the final oil.
3. Crushing into Olive Paste
The whole olives — fruit and pit together — are crushed into a fine paste using modern milling equipment. This process breaks open the olive cells, releasing tiny droplets of oil while preserving natural flavor compounds and antioxidants.
4. Gentle Malaxation (Slow Mixing)
The paste is slowly and gently mixed for around 20–45 minutes, under carefully controlled, cool temperature conditions. This helps the tiny oil droplets to merge into larger ones without generating heat — a crucial step in cold-pressed oil that ensures maximum aroma, taste, and nutritional value.
5. Pure Mechanical Extraction
Next, we extract the oil entirely by centrifugation — no heat, no solvents, no refining. This ensures the oil remains in its most natural, unadulterated form. The result is clear, golden EVOO rich in natural antioxidants and healthy monounsaturated fats.
6. Final Clarification & Separation
A final “polishing” separates any residual water and solid particles, leaving you with bright, pure oil — ready to bottle.
7. Hygienic Storage & Bottling
Our EVOO is stored under hygiene-conscious conditions in stainless-steel tanks, away from light and heat. When bottled, it’s sealed in dark, protective containers to preserve freshness, flavor, and nutrients until it reaches your kitchen.
